Grilled Croissant with Gouda & Bacon

Lately I've been feeling very stretched. Between trying to appeal to all the palates in the house, keeping up with the household chores, balancing blogging and family and the countless other projects that I've taken on, it can be exhausting. You know those moments when all you want to do is unplug from the world and catch up with a good book and a cup of tea? Those are the days I have been having lately. 

All that said, here is an easy and quick recipe for a sandwich that I grilled up for my husband over the weekend. It is not the healthiest, it is not gourmet, but it is made with local ingredients and does not take too much time to make. For those days when you just want to get in the kitchen and get out. My husband didn't complain though, in fact he was licking his lips for hours. I suppose every so often bacon and cheese is alright, I'm sure there are worse things he could be eating.


 Grilled Croissant with Gouda and Bacon
1 fresh croissant, cut in half
a couple slices of gouda cheese
1-2 pieces of bacon

Over medium heat, melt a smidge of butter in a frying pan. When hot, add in bacon and cook for about 1-2 minutes on each side or until the bacon is crisped on the outside and still a little chewy on the inside.

Remove bacon and place on paper towel or towel to absorb extra grease. Place croissant face down in the pan and toast for 1 minute then flip, add cheese and bacon. Toast sandwich for 2 minutes then turn the heat off and cover.



By turning the heat off and covering the sandwich, you keep all the heat in there but avoid the risk of burning the croissant. Which allows the cheese to melt and keeps the croissant crispy and delicious.


I serve this sandwich with a little tomato basil salad on the side. You have to eat something healthy with this meal, why not a light, easy to make salad.
